Buck Heads into the Kitchen for November BotM

Buck is, ahem, serving up something a little bit different for the November Buck of the Month. They have released a 948, a hefty vegetable cleaver, a non-standard model done up in a limited edition prestige variant just in time for Thanksgiving.

Buck may be better known for their outdoors-centric folders and fixed blades, but they’ve cultivated a fairly sizeable kitchen knife lineup as well – another exhibit in an ongoing trend of enthusiast knife companies stepping into the culinary genre, delivering modern steels and materials to a genre that has been underserved in that department for quite some time. The 948 appears to be the bigger brother to the Buck 946 meat cleaver, currently the only cleaver kitchen knife in the company’s active lineup.

The 946 was no small knife, with a 5.75-inch cutting edge, but the 948 scales up even further, with a blade length of 7 inches. But while it’s larger, it’s thinner, optimized to do yeoman’s service on the cutting board, working with vegetables rather than meat – this is not an edge you want to slam up against a bone. The 948’s imposing blade is made from a plus-sized hunk of 12C27M steel, a fine formulation that is a tasteful choice for kitchen work thanks to its good edge retention, relatively simplicity in terms of sharpening, and a heaping helping of stain resistance.

The undulating handle is covered by two contoured pieces of genuine ebony wood, held against the full tang body with chunky steel rivets. The ergos look to be on point, in other words, and that extra-wide blade drops well below the grip line, so that high octane chopping can be effected without your knuckles rapping against the cutting surface. No sheath on this one as it isn’t meant to go on a belt or pack; instead, a carbon fiber-style blade cover is included with each piece.
